Twice Baked Make Ahead Cheese Souffle

This is a twice baked soufflé, because..…well, it’s baked twice. Firstly to make the soufflé, for it to puff up in all it’s glory, then secondly to reheat it, puff up again and for the cream poured over it to become bubbly and golden. To make-ahead, you simple freeze it after the first time you bake it, then defrost it completely before baking again with the cream. And you will be absolute amazed how much it puffs up the 2nd time you bake it – by my measurements, it actually puffed up slightly more than the first time!...

What I Do With Leftover Egg Whites

What I do with leftover egg whites Hope you find that useful! To use, thaw overnight in a bowl then use per recipe. I don’t recommend using them in recipes that rely on fluffing them up (like pavlova). But they can be used for other purposes – suggestions listed below. – Nagi x

Wonton Soup

This is a reader-favourite recipe included by popular demand in my debut cookbook “Dinner”! Wonton soup If you’ve ever had store bought frozen wontons or wontons from a good value Chinese place that probably uses frozen wontons, you will be amazed how different homemade ones are. The main difference is the texture of the filling – because homemade wontons are made with just pure fresh ingredients, NO mysterious fillers! I think wontons are one of those things that many people don’t think to make, assuming they are really tedious and take ages....

Beef Fajitas

This is a reader-favourite recipe included by popular demand in my debut cookbook “Dinner”! I’m going away tomorrow for a beach escape with my girlfriends and in usual form, I piped up straight away and said “bags taking care of the food!”. No one complained. Everybody wants a proper break. Me? Relaxing = cobbling around in the kitchen with many mouths to feed. 🙂 But it is, after all, a holiday, and I don’t plan to spend hours upon hours making complicated fussy things....

Blueberry Cheesecake

Blueberry Cheesecake I know sometimes the thought of a quick ‘n easy no-bake cheesecake recipe is enticing. But if you want to make cheesecake the way it’s intended to be, with a filling that’s somehow fluffy but creamy at the same time, rich but not so dense that it sticks to the roof of your mouth, then a baked cheesecake is the way to go. Add pops of blueberry littered throughout that lemony cheesecake filling, then OMG that insane glistening blueberry topping …....

Chinese Chicken Salad

CHINESE CHICKEN SALAD – MY MOST MADE ASIAN SALAD! This is my most made faux Asian salad. It’s “faux” because it’s in no way authentic Chinese and that’s totally ok. I love it anyway because it’s so delish, and it’s a good way to make me inhale large volumes of fresh greens. THE ASIAN SALAD DRESSING The Asian salad dressing I use in this salad is based on a recipe by David Chang of Momofuku....

Churros Recipe

BONUS: Churros are great for making ahead, making it a great party dessert. Churros recipe Up until several years ago, this churros obsessed food blogger thought Churros was native to Mexico. Frittata

Great way to make breakfast for a crowd and a make ahead, protein rich meal you can keep for days and days. Also see Baked Frittata – no stove required! Pancakes Fluffy Quick No Fail

Pancakes recipe Homemade pancakes shouldn’t be complicated. Parmesan Thyme Bread Crust Snacks

I don’t know about you but my freezer is valuable real estate. So when I opened it the other day to realise that my bag of bread crusts were taking up an inordinate amount of space, I decided I needed to do something about it. More croutons? More breadcrumbs? I needed neither. Besides, the bag of bread crusts was substantial (from an “English afternoon tea” and several attempts to create these Mini Quiche Toast Cups) and neither of those two options would use up more than a few cups....
