A Big Mexican Fiesta That S Easy To Make

Mexican Food Fiesta! If you really twisted my arm and forced me to choose, I’d say Mexican is my favourite food……… along with Japanese, Thai, Vietnamese, Chinese, Southern, Italian and Middle Eastern food. 😂😂😂 This feast you see is in the spirit of Cinco de Mayo which is on Saturday, 5 May 2018. It marks the anniversary of Mexico defeating the French invasion in 1862, but ironically, is more widely celebrated in the States than in Mexico....

Aloo Paratha Indian Potato Stuffed Flatbread

I was inspired to make this because I wanted to make something a little unique using leftover mashed potato I had from making Shepherd’s Pie Potato Skins (yet again….I love them!). This recipe is from my favourite Indian food blog, Priya’s Kitchenette. Besides the fact that Priya is an incredibly generous and kind person, she is phenonemal in the kitchen and her blog opened up the world of Indian cooking to me....

Cream Cheese Stuffed French Toast

This. It’s incredible. It tastes like a cheesecake….but also like french toast. It’s soft and custardy and buttery. A little bit sweet, but not too sweet. The top of the loaf has a thick, golden crust, reminiscent of the golden crust you get from traditional pan fried french toast. Then you have that incredible cream cheese layer. It’s SO SIMPLE, but so perfect for this french toast loaf. I got the filling recipe from Mira at Cooking LSL, from her Cream Cheese Filled Banana Bread with Coconut Oil....

Creamy Chicken And Bacon Pasta

Luxuriously rich Creamy Chicken and Bacon Pasta I’ve been crowned the Queen of Creamy-Without-Cream*, but today I’m dethroning myself temporarily just so I can share this Creamy Chicken and Bacon Pasta with you without an inkling of guilt. We’ve made it to the end of the year, and the month of December is about indulgences. I’ve been very sensible in the past and shared real Alfredo recipes, made the real proper Italian way....

Garlic Brown Butter Shrimp Prawns

This is my copycat of a dish I had at a posh Sydney restaurant. Do you ever go to restaurants, order expensive dishes, pay a fortune and think “heck, I could make this myself!”? That’s exactly what I did in this case. It’s such a simple, beautiful flavour combination which was super easy to replicate at home. Ahem. OK. To be entirely truthful, I may have rather extensively grilled the poor waiter to get as much detail as I could…and he actually had to go into the kitchen to get all the answers!...

Honey Cinnamon Pumpkin Lentil Salad

Inspired by a Spiced Sweet Potato Salad from Community by Sydney local Hetty McKinnon, this is a big pile of vegetable goodness made seriously tasty. After a (very!) extended water break, the inaugural Holiday Salad Marathon has resumed! Today – lentils made fabulous: Spiced Pumpkin Lentil Salad I had someone in my team make this to see if she liked it because the flavour profile is out of character for me – something I tried one day as a “let’s give this a go!...

Jamie Oliver S Chicken In Milk Seriously Delish

To say that this is one of the best roast chickens I have ever had in my life is a big call, I know. That’s how good this is. When you read the recipe, you’ll probably be as dubious as I was. “Lemon and milk? Surely that will curdle. And a cinnamon stick? This just sounds weird.” I then took to Google out of curiosity to see if others had tried it....

Magic Three Layer Custard Cake

If you love vanilla sponge cakes and custard, you are going to be as obsessed with this cake as I am. It looks like it’s been carefully layered with three different components. But it’s not! You just pour one simple batter into a cake tin, pop in the oven, and this is how it comes out!! There is no special ingredient nor any tricky technique. The batter is made pretty much like a traditional vanilla sponge cake, it is just much thinner....

Nutella Crepes With Strawberries

Great crepes are all about getting the batter right. I find that the best and easiest way to make a perfect batter is using a blender. No lumps, no tearing when you flip, with just 10 seconds of whizzing! It’s a breeze to make crepes if you get the batter right. Too thin, and the crepes tear easily when you flip them. Too thick, then the batter is difficult to swirl around to coat the pan to make thin crepes....

Sandwich Bread Without Yeast

Use for sandwiches, toast, grilled cheese, French Toast – anything you normally make with sandwich bread. Bread without yeast This no yeast bread is inspired by the Australian Damper, a traditional bushman’s bread made with flour and water that was cooked over campfires. Except I’ve brought it into the 21st century to make the crumb fluffier, more tender and tastier, and made it look like sandwich bread rather than a freeform loaf....

The Making Of A Cookbook Part 1

Like a GIANT jigsaw puzzle…..!!! 🤯 My publisher put it best when they said that we’re at that stage right now when it feels like we’ve tipped out the contents of a (giant) jigsaw puzzle! That’s exactly how I feel – I can see a gazillion pieces that I know will fit together at the end, but it’s hard to decide where to start. To be honest, after pottering around for a few days like a lost soul, trying to figure out the best way to tackle this project, I just decided to dive into what I love doing the most – cooking....

Welcome to the RecipeTin Eats Guide for how to cook a whole fish! Alfredo Salmon Pasta

I’ve written before about the “proper” way to make pastas. The way Italian Nonna’s do. The way real Italian restaurants do. It’s not about using loads and loads of sauce. The magic step that makes all the difference between a decent pasta and a really great one is tossing the pasta gently with the sauce and some of the pasta cooking water, just before serving. What this does is activate the starch in the water and it mingles with the oil in the sauce, so it becomes glossy and luscious and coats every strand of pasta....
